Experience from the front line

Anna didn't learn management from expensive textbooks, but in the backrooms of Zakopane's guesthouses. She started in December 2007 as a receptionist in a family facility in Olcza. Over the last 16 years, she has climbed every step – from arranging schedules for 12 maids to negotiating contracts with meat suppliers for a hotel restaurant. She knows the realities of working in the high season when Zakopane is short of hands and guests expect everything immediately.

At Tatry Peak Management, she deals with what is most important – looking for money that slips through owners' fingers. In 2023 alone, she conducted audits in 19 facilities in Podhale. In one of the hotels in Bukowina Tatrzańska, thanks to a change in the linen circulation system, operational costs were reduced by 13.4% in just 4 months. Anna believes that numbers don't lie and always starts with hard data extracted from the POS system.

Her work is always done on time. She doesn't play around with writing 50-page reports that no one reads. Instead, you get a specific list of 7–9 changes to be implemented immediately. For example: changing the weight of side dishes on the menu or a new system for accounting for kitchen staff working time. These are simple moves that actually leave more cash in the register at the end of the month. (She is sometimes brutally honest, which not every chef likes, but the results speak for themselves).

Privately, Anna is a native of Zakopane who escapes to the mountains after work. She has walked most of the trails in the High Tatras, which taught her humility and that planning is the basis of success. At work, she applies the same principle: first solid preparation, then concrete action without fluff. If your food cost exceeds 32.8%, Anna will find the cause in less than 5 business days.
